One Skillet Breakfast Hash

This one skillet breakfast hash is one of our favorite meals. It's quick, easy, and super filling. Throw whatever toppings you like on it, and eat up!

Plus, it's great for breakfast, lunch, or supper!


One Skillet Breakfast Hash

Prep Time: 5 minutes | Cook Time: 15-20 minutes


  • 1 lb Henderson Farms ground beef
  • Salt and Pepper to taste
  • 1 tsp. garlic powder
  • 1/2 of a large onion (diced)
  • 1 28 oz bag of O'Brien potatoes
  • 4 large eggs (beaten)
  • 1 cup shredded cheddar or Mexican blend cheese
  • Sour cream for topping
  • Salsa for topping


  1. In a large skillet, brown ground beef over me-high heat and season with salt, pepper, and garlic powder.
  2. Add diced onion when ground beef is nearly done, and continue cooking.
  3. When the ground beef is fully cooked, add the potatoes, stirring occasionally. (Adding a lid will speed up the potatoes cooking.)
  4. When potatoes are fully cooked, scoot the meat/potato mixture to the edges, leaving a hole in the middle of the skillet.
  5. Pour in beaten eggs, gently stirring only the eggs until they are cooked.
  6. Stir eggs in with meat/potato mixture until combined.
  7. Top with shredded cheese and allow to melt.
  8. Serve hot with sour cream and salsa if desired.
